Australia: Out Back Cooking, Chicken on the Barbie

Grilling on the Barbie, Australia outback style


What a way to end the day, after riding up and down dust infested Australian outback roads all day, it was always a delight to settle in at a campground and enjoy a cold "tinnie" and whatever the main course for the evening was. Chicken,steak, burgers or shrimp normally highlighted the cuisine, sometimes, if we were lucky, all four items would be available. The driver , pictured here, would be the chief cook and bottle washer, our main job was to supervise and make sure the beer didn't run out.
After dining under the Southern Cross and enjoying a superb dinner with all the fixin's, the only thing left to do was to enjoy an after dinner drink, watch our camp fire die down and settle in for a warm winter's nap in our comfortable(not) swags,only to awaken to a new day and new adventures.
